A delicious cheese with a historical name, our Heysen Blue Cheese is named after Hans Heysen (Hi-Sen), an acclaimed landscape artist of the region. When young, this cheese is quite firm and moist, offering a cheddar-like flavour. As it matures, this flavour deepens in sharpness and becomes fruitier in its complexity. There is also a slight salty taste and delightful creaminess.
