Crispy Chicken Wings with Heysen Blue Cheese Sauce

INGREDIENTS
Blue Cheese Sauce
- 100g Udder Delights Heysen Blue cheese
- 100g sour cream
- 50g mayonnaise
- 2 tsp lemon juice
- 1 tbsp milk
- Salt and pepper, to season
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh chives, finely chopped
Chicken Wings
- 1kg chicken wings
- 1 tbsp cornflour
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp chilli flakes (optional)
- Salt and pepper, to taste
- 1 tbsp extra virgin olive oil
Other:
- Your choice of vegetables
DIRECTIONS
In a medium bowl, crumble the cheese with your hands, then add the sour cream, mayonnaise, lemon juice and milk. Mix well to combine, then stir in the herbs and season as needed with salt and pepper.
Preheat the oven to 200°C and line a baking tray with parchment paper. Pat the chicken wings dry with a paper towel, then transfer to a bowl with olive oil and toss to coat. Add the corn flour, spices and salt and pepper and toss again to coat. Arrange the chicken wings on a rack on top of the baking tray and bake for 40 minutes, or until golden and cooked through.
Serve the chicken wings with the blue cheese sauce and your choice of vegetables
