Chèvre and Smoked Salmon Omelette

Ingredients
- 2 free range eggs
- 2 tbsp milk
- 2 tsp chives, finely chopped
- Pinch of salt and cracked black pepper
- 1 tbsp butter
- 2 tbsp Udder Delights Chèvre
- 50g smoked salmon
- 1/4 avocado
- Dill, to garnish
Directions
- Crack eggs into a bowl and add milk and chives. Season with salt and pepper, then whisk to combine.
- Heat butter in a pan over low-medium heat. Add the egg mixture and tilt the pan to ensure the eggs are evenly spread.
- When the omelette begins to set, flip and cook for another 1-2 minutes, or until cooked.
- Transfer omelette to a plate and serve with Udder Delights Chèvre, smoked salmon, avocado and dill.
