Chèvre and Smoked Salmon Omelette

Ingredients

  • 2 free range eggs
  • 2 tbsp milk
  • 2 tsp chives, finely chopped
  • Pinch of salt and cracked black pepper
  • 1 tbsp butter
  • 2 tbsp Udder Delights Chèvre
  • 50g smoked salmon
  • 1/4 avocado
  • Dill, to garnish

Directions

  1. Crack eggs into a bowl and add milk and chives. Season with salt and pepper, then whisk to combine.
  2. Heat butter in a pan over low-medium heat. Add the egg mixture and tilt the pan to ensure the eggs are evenly spread.
  3. When the omelette begins to set, flip and cook for another 1-2 minutes, or until cooked.
  4. Transfer omelette to a plate and serve with Udder Delights Chèvre, smoked salmon, avocado and dill.
