<li>2 tablespoons olive oil</li>



<li>1 brown onion, thinly sliced</li>



<li>2 garlic cloves, crushed</li>



<li>1 teaspoon harissa paste</li>



<li>2 teaspoon tomato paste</li>



<li>300g red capsicum, sliced</li>



<li>1/2 teaspoon ground cumin</li>



<li>1/4 teaspoon chilli flakes</li>



<li>1/2 teaspoon salt</li>



<li>1/4 tsp black pepper</li>



<li>2 x 400g tinned tomatoes</li>



<li>130g Udder Delights Chèvre</li>



<li>4 eggs</li>



<li>1 tablespoon parsley, finely chopped</li>
</ul>



<h3 class="wp-block-heading">Directions</h3>



<ol class="wp-block-list">
<li>Place a large frypan over medium heat and add oil. Once hot, add the sliced onion and garlic. Cook for 2 minutes then add the harissa and tomato paste. Cook until the paste darkens in<br>colour; approximately 2-3 minutes.</li>



<li>Add the chopped capsicum, ground cumin and chilli to the pan. Cook for 10 minutes, or until the onion and capsicum begin to soften.</li>



<li>Season with salt and pepper, then add the tinned tomatoes. Simmer and cook for another 10 mins, or until slightly thickened.</li>



<li>Add half the Chèvre and stir to combine.</li>



<li>Use a spoon to make 4 dips in the sauce, then crack an egg in each. Cover and cook for another 8-10 minutes, or until the egg whites are cooked.</li>



<li>Crumble the remaining Chèvre on top, then garnish with parsley and serve.</li>

<ul class="wp-block-list">
<li>250g/30x30cm sheet of shortcrust pastry (sweet)</li>



<li>100g Udder Delights Goats Curd</li>



<li>4 small Corella pears, peeled</li>



<li>600mL Rosé wine</li>



<li>2 strips of lemon peel</li>



<li>375mL Honey Liqueur</li>



<li>3tbsp brown sugar</li>
</ul>



<h3 class="wp-block-heading">Directions</h3>



<ol class="wp-block-list">
<li>Preheat oven to 180°C.</li>



<li>Cut 8 x 10cm circles from pastry sheet.</li>



<li>Cut a 6-7cm circle out of the 4 larger circles and remove pastry from centre to create a ring.</li>



<li>Place 1 ring on each large pastry circle to create 4 tart bases.</li>



<li>Transfer to a baking tray and cook for 10-12 minutes at 180°C, or until golden brown.</li>



<li>To poach pears, heat Rosé in a small saucepan with lemon peel.</li>



<li>Submerge pears, and simmer for 20 minutes. Then remove and set aside.</li>



<li>For the caramel, heat Honey Liqueur in a small saucepan with brown sugar and stir until thick and syrupy.</li>



<li>To assemble, divide Goats Curd between the tart bases, top each with a pear and drizzle with liqueur caramel.</li>

<ol class="wp-block-list">
<li>Crack eggs into a bowl and add milk and chives. Season with salt and pepper, then whisk to combine.</li>



<li>Heat butter in a pan over low-medium heat. Add the egg mixture and tilt the pan to ensure the eggs are evenly spread.</li>



<li>When the omelette begins to set, flip and cook for another 1-2 minutes, or until cooked.</li>



<li>Transfer omelette to a plate and serve with Udder Delights Chèvre, smoked salmon, avocado and dill.</li>
